01 — Concept

Eight plates,
a day on Ishigaki.

The theme is a single day on Ishigaki.

It begins with the morning sea, passes through the midday light and moves towards dusk. A day on the island, served as eight plates.

02 — Course

Sunset Full Course

8 courses | JPY 16,500 (incl. tax)

Both the ingredients and the treatment depend on what arrives that day. No two sets of eight plates are ever the same.

  1. The sea in the early morning, before anyone is out. A clear first mouthful opens the island's day.

  2. Another island appears beyond the horizon. The lift of a journey beginning, in a single bite.

  3. Where two currents meet, the fish gather. What comes from the sea meets what comes from the land, here on the plate.

  4. The sound of waves coming and going. The scent of the shoreline opens slowly in the mouth.

  5. Midday light falling straight down. The hour when both colour and flavour come through strongest.

  6. The wind drops and the sea turns to glass. From here, the flavours deepen quietly.

  7. The centre of the course. French technique laid over what the island has grown — a flavour that exists only here.

  8. The sky stays light after the sun has gone. A gentle sweetness to close the evening.

Island ingredients,
French technique.

The kitchen is overseen by Seishi Kiyota, who earned a Michelin star in Osaka. That craft now works for the ingredients of Ishigaki.
